Roasted Pepper Mac and Cheese
Ingredients
- 1 red pepper
- 1 small red onion
- 3 garlic cloves
- 1 medium carrot
- 50 grams of cashews
- 2 tbsp of nutritional yeast
- 1-2 tbsp of apple cider vinegar
- 2 tsp of dried thyme
- pinch of salt
- 50 grams of lentil pasta
Preparation
First, cover cashews with water and allow it to soak while you prepare everything else
Chop veggies, leave the garlic with skin on, drizzle lightly with olive oil and sprinkle with salt and thyme
Roast in preheated to 180 degrees oven for 25 minutes
When veggies are ready to cook the pasta according to the instructions on the packet
Drain the cashews and blend it together with veggies(peel the garlic first), 100 grams of water, a pinch of salt, nutritional yeast, and vinegar
Taste and adjust the seasonings if needed
Toast the pasta with the desired amount of sauce and serve with roasted mushrooms if desired
