Ratatouille Pasta Dish

Ingredients

  • 380 g lentils
  • 390 g crushed tomatoes with chili
  • 2 tbsp nutritional yeast
  • 1 handfull of fresh basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 red onion
  • 1/2 zucchini
  • 1/2 red pepper

Preparation

  1. Chop the veggies into cubes

  2. Add to a pan with oil and fry it off for a few minutes until the veggies are golden

  3. Stir down the rest of the ingredients + chopped basil while cooking the pasta

  4. Add the pasta to the rataouille mix and stir everything together

  5. Serve in bowl with extra basil on the top
