Ratatouille Pasta Dish
Ingredients
- 380 g lentils
- 390 g crushed tomatoes with chili
- 2 tbsp nutritional yeast
- 1 handfull of fresh basil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 red onion
- 1/2 zucchini
- 1/2 red pepper
Preparation
Chop the veggies into cubes
Add to a pan with oil and fry it off for a few minutes until the veggies are golden
Stir down the rest of the ingredients + chopped basil while cooking the pasta
Add the pasta to the rataouille mix and stir everything together
Serve in bowl with extra basil on the top
