Balsamic Veggie Pasta Dish

Ingredients

  • pasta of choice
  • 3 garlic cloves
  • 1 red onion
  • 150g cocktail tomatoes
  • 250g tofu (firm) - pressed of water
  • Fresh basil
  • dried thyme
  • 2tbsp oil
  • 4tbsp balsamic vinegar
  • 4tbsp oat cooking cream
  • optional - 2 tbsp red cookng wine
  • salt and pepper
  • oil for frying
  • balsamico & vegan parmesan
  • optional, add some sundried tomatoes and olives

Preparation

  1. Boil pasta in salted water

  2. In a bowl mix together 2tbsp oil, 4tbsp balsamic vinegar, 4tbsp oat cream and red wine. Add salt, pepper, thyme and basil. Mix and set aside

  3. Add some oil in a frying pan. Add minced gsrlic and diced onion. Fry until golden brown

  4. Add chopped tofu along with halved cocktail tomatoes

  5. Pour the balsamic mix over and allow to simmer for 10-15minutes until reduced

  6. Once the pasta is done. Drain of water

  7. Add pasta to the frying pan along with more fresh basil and black pepper. Mix until combined

  8. Eat warm with some vegan parmesan and why not combine with a glass of red wine and garlic bread for ultimate tastiness
