Creamy Pasta with Silken Tofu

Ingredients

  • 2 cups pasta of choice
  • 1 medium red onion, chopped
  • 1/3 cup fresh sweetcorn
  • 10 oz silken tofu
  • 1/2 cup plant based milk
  • 2 cloves garlic
  • 2 tbsp nutritional yeast
  • 1 tsp salt
  • 1 tsp cumin
  • Juice of 1/2 lemon

Preparation

  1. Cook the pasta according to packaging instructions

  2. Meanwhile, sauté the onion and the sweetcorn in a non-stick frying pan until softened, and add the tofu, plant based milk

  3. Garlic, nutritional yeast, salt, cumin and lemon to a blender or a food processor. Blend until very smooth. Pour the sauce into the frying pan and stir to heat up for a few minutes

  4. Drain and rinse the pasta and combine it with the sauce in the frying pan before serving.•
