Creamy Pasta with Silken Tofu
Ingredients
- 2 cups pasta of choice
- 1 medium red onion, chopped
- 1/3 cup fresh sweetcorn
- 10 oz silken tofu
- 1/2 cup plant based milk
- 2 cloves garlic
- 2 tbsp nutritional yeast
- 1 tsp salt
- 1 tsp cumin
- Juice of 1/2 lemon
Preparation
Cook the pasta according to packaging instructions
Meanwhile, sauté the onion and the sweetcorn in a non-stick frying pan until softened, and add the tofu, plant based milk
Garlic, nutritional yeast, salt, cumin and lemon to a blender or a food processor. Blend until very smooth. Pour the sauce into the frying pan and stir to heat up for a few minutes
Drain and rinse the pasta and combine it with the sauce in the frying pan before serving.•
