Cheesy Tomato Pasta

Ingredients

  • 2 cups pasta of choice
  • 1 tsp coconut oil
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tbsp tomato paste
  • 3/4 cup plant based milk of your choice
  • 2 tbsp nutritional yeast
  • salt and pepper to taste
  • 1/4 cup vegan cheese, grated

Preparation

  1. Cook the pasta according to packaging instructions

  2. Meanwhile, heat the coconut oil a pan and add the garlic, onion and tomato paste

  3. Cook for 6-7 minutes, stirring frequently

  4. Then add the plant based milk and nutritional yeast

  5. Stir to combine

  6. When the pasta is done, transfer it to the pan using a slotted spoon together with 1/4 cup pasta water

  7. Season to taste with salt and pepper and add the vegan cheese

  8. Serve when the cheese melts
