Vegan Chickpea Pasta with Coconut and Vegetables

Ingredients

  • 2 1/2 cups pasta of choice
  • 2 cloves garlic, chopped
  • 1 medium onion, diced
  • 2 tbsp tomato paste
  • 1 carrot, chopped
  • 1/2 can coconut milk
  • 2 tbsp nutritional yeast
  • 2 tsp dried basil
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup vegan cheese
  • Salt to taste

Preparation

  1. Cook the pasta according to packaging instructions.

  2. Meanwhile, sauté onion and garlic for 2 minutes, then add the tomato paste, carrot, coconut milk, and nutritional yeast.

  3. Cook for 4-5 minutes more, stirring frequently, until the carrot softens, then add the dried basil, chickpeas, and vegan cheese.

  4. Next, add drained and rinsed pasta together with 1/4 cup pasta water.

  5. Stir and season to taste with salt before serving.
