Sundried Tomato-Hummus Pasta

Ingredients

  • 2 handfuls fresh spinach
  • 2 tomatoes
  • 1 small red onion
  • 2 garlic cloves
  • 1-2tbsp dried thyme
  • salt and pepper

  • begin by boiling the pasta according to instructions.
  • season with thyme, salt and pepper.

Preparation

  1. Make your own hummus, if you don't have some prepped already

  2. Or just use storebought

  3. Though you may want to thin it out with a little water or plantbased cooking cream

  4. In a frying pan, pour a generous amount of the oil from the sundried tomatoes into the pan

  5. Then fry the garlic cloves, diced red onion and vegan ch*cken pieces until golden/crispy

  6. Season with thyme, salt and pepper

  7. Once the pasta is done, drain of water - but save a little

  8. Pour the pasta (and a little of the pasta water) into the frying pan

  9. Add several scoops of hummus along with the sundried tomatoes and fresh spinach

  10. Mix until combined

  11. Then serve with some fresh spinach and fresh tomatoes

  12. Or place in glass lunch boxes and freeze or place in the fridge to last the week ??
