Nut-Free Vegan Sunflower Seed Pesto
Ingredients
- 2 cups basil (from frozen, thawed)
- 1/4 cup sunflower seeds
- 4 tablespoons vegetable broth
- juice of 1 lemon
- 3 tablespoons nutritional yeast
- 3 large garlic cloves
- salt and pepper to taste
Preparation
Blend all ingredients in a food processor, adding more liquid or a splash of olive oil to make smooth.
Mix with pasta and vegetables, then serve.
