Nut-Free Vegan Sunflower Seed Pesto

Ingredients

  • 2 cups basil (from frozen, thawed)
  • 1/4 cup sunflower seeds
  • 4 tablespoons vegetable broth
  • juice of 1 lemon
  • 3 tablespoons nutritional yeast
  • 3 large garlic cloves
  • salt and pepper to taste

Preparation

  1. Blend all ingredients in a food processor, adding more liquid or a splash of olive oil to make smooth.

  2. Mix with pasta and vegetables, then serve.
