Healthy Kale Pesto for Busy Nights

Ingredients

  • 3-4 handfuls kale
  • 3 garlic cloves
  • 7 tablespoons olive oil
  • 1/2 onion
  • Juice of 1 lemon
  • 1 handful sunflower seeds
  • 4 tablespoons nutritional yeast
  • Splash of water
  • Salt, pepper

Preparation

  1. Chop the kale

  2. Chop garlic and onion and fry in oil

  3. Add everything to a food processor

  4. Serve with pasta, sandwiches, pizza or salad bowls
