Vegan Kale Caesar Salad Dressing
Ingredients
- 1/2 cup cashews
- 2 tablespoons spicy mustard
- 1 tablespoon olive oil
- 4-5 cloves garlic
- 1 lemon
- 2 teaspoons tahini
- 1 tablespoon nutritional yeast, optional
- salt and pepper to taste, approximately 1/2 teaspoon each
- 3 tablespoons capers
- 1/4 cup water, plus 1-2 tablespoons more to thin if needed
Serving items
- Kale
- Hemp hearts
- Crunchy chickpeas
Preparation
Soak cashews in boiling water for at least 15 minutes.
Drain and rinse the cashews with clean water.
Add all ingredients except capers to a blender and blend until smooth.
Add capers and blend for 20-30 seconds until finely chopped.
Store in an airtight container and use within 2 weeks.
Dress kale with the desired amount of dressing and top with hemp hearts and crunchy chickpeas.
