Vegan Kale Caesar Salad Dressing

Ingredients

  • 1/2 cup cashews
  • 2 tablespoons spicy mustard
  • 1 tablespoon olive oil
  • 4-5 cloves garlic
  • 1 lemon
  • 2 teaspoons tahini
  • 1 tablespoon nutritional yeast, optional
  • salt and pepper to taste, approximately 1/2 teaspoon each
  • 3 tablespoons capers
  • 1/4 cup water, plus 1-2 tablespoons more to thin if needed

Serving items

  • Kale
  • Hemp hearts
  • Crunchy chickpeas

Preparation

  1. Soak cashews in boiling water for at least 15 minutes.

  2. Drain and rinse the cashews with clean water.

  3. Add all ingredients except capers to a blender and blend until smooth.

  4. Add capers and blend for 20-30 seconds until finely chopped.

  5. Store in an airtight container and use within 2 weeks.

  6. Dress kale with the desired amount of dressing and top with hemp hearts and crunchy chickpeas.
