Vegan Loaded Caesar Salad

Ingredients

  • 1 cup cashews
  • 1 cup water
  • 2-3 large garlic cloves
  • 2 tbsp yellow mustard
  • 2 tbsp nutritional yeast
  • 2 tbsp capers
  • 1 large lemon juiced
  • 1 can chickpeas
  • paprika
  • salt
  • garlic powder
  • onion powder
  • avocado oil
  • block of tempeh
  • 4 tbsp tamari
  • 2 tbsp maple syrup
  • 1 tsp liquid smoke
  • 1 tsp paprika
  • 1 cup raw cashews
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/4 cup nutritional yeast

Preparation

  1. Soak cashews if needed, then blend everything till it’s creamy in a blender

  2. Add spices to chickpeas, drizzle oil on pan then on medium heat fry the chickpeas up till crispy

  3. Crumble tempeh into small chunks

  4. Add into bowl with other ingredients

  5. Let soak for a couple minutes

  6. On medium high heat fry the mix till the sauce is caramelized on the tempeh and it’s crisped up

  7. Blend everything in food processor till you get a fine crumble

  8. Once you have all the components, dress the kale with dressing till it’s all coated

  9. Add chickpeas, tempeh and mix again then top with the parm!!
