Homemade Vegan Basil Pesto Gnocchi

Ingredients

  • 17 oz of gnocchi
  • 2 tbs of olive oil
  • Salt/pepper to taste

Basil pesto

  • 1 handful of fresh basil
  • 1 handful of spinach
  • 2 small garlic cloves
  • 2 tbs of nutritional yeast
  • 1/3 cup of walnuts
  • 2 tbs of olive oil
  • Juice of 1 lemon
  • 2 tbs of water
  • Salt/pepper to taste

Preparation

  1. In a medium-sized pan, add gnocchi and olive oil. Cook on medium-low for about 10 minutes.

  2. Remove gnocchi from the pan.

  3. Mix in your Homemade Basil Pesto with the gnocchi.

  4. Enjoy

  1. Add all ingredients to the food processor. Process until smooth and creamy.

  2. Enjoy
