Simple Avocado Pesto Pasta

Ingredients

  • 12 ounces pasta
  • 1 large avocado
  • 1 cup fresh basil
  • 1/3 cup walnuts
  • 1 small lemon
  • 1/2 cup olive oil
  • 1 tablespoon garlic
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Preparation

  1. Cook pasta according to package directions, drain, and set aside.

  2. In a high-powered blender or food processor, combine the avocado, fresh basil, walnuts, lemon juice, olive oil, nutritional yeast, garlic, salt, and pepper.

  3. Pulse ingredients until it becomes a creamy sauce.

  4. Toss cooked pasta with the avocado pesto sauce and eat immediately.
