Simple Avocado Pesto Pasta
Ingredients
- 12 ounces pasta
- 1 large avocado
- 1 cup fresh basil
- 1/3 cup walnuts
- 1 small lemon
- 1/2 cup olive oil
- 1 tablespoon garlic
- 2 tablespoons nutritional yeast
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Preparation
Cook pasta according to package directions, drain, and set aside.
In a high-powered blender or food processor, combine the avocado, fresh basil, walnuts, lemon juice, olive oil, nutritional yeast, garlic, salt, and pepper.
Pulse ingredients until it becomes a creamy sauce.
Toss cooked pasta with the avocado pesto sauce and eat immediately.
