Easy Vegan Pesto Pasta with Liviva Foods Soybean Fettuccine
Ingredients
- Liviva Foods Organic Soybean Fettuccine
- 2 oz spinach (2 cups)
- 1 oz fresh basil (1 cup)
- 3/4 cup nutritional yeast
- 1/2 avocado
- 1/3 cup olive oil
- 1/4 cup almonds (1.5 oz)*
- 3 cloves garlic
- 2 tbsp hemp seeds
- juice of one lemon
- 1-2 tsp salt
- 1 tsp pepper
Preparation
Add spinach, basil, avocado, nutritional yeast, almonds, hemp, garlic, lemon juice, olive oil, salt, and pepper to a blender to make the pesto sauce.
Blend everything until you get a thick and creamy sauce.
Cook Liviva Foods fettuccine according to package instructions and add the sauce to the pasta.
Optional: roast cherry tomatoes by slicing them in half and drizzling olive oil, garlic powder, salt, and pepper on top, then roast them in the oven for 15 minutes at 350F/175C.
Add the tomatoes on top of the pesto pasta and enjoy.
