Easy Vegan Pesto Pasta with Liviva Foods Soybean Fettuccine

Ingredients

  • Liviva Foods Organic Soybean Fettuccine
  • 2 oz spinach (2 cups)
  • 1 oz fresh basil (1 cup)
  • 3/4 cup nutritional yeast
  • 1/2 avocado
  • 1/3 cup olive oil
  • 1/4 cup almonds (1.5 oz)*
  • 3 cloves garlic
  • 2 tbsp hemp seeds
  • juice of one lemon
  • 1-2 tsp salt
  • 1 tsp pepper

Preparation

  1. Add spinach, basil, avocado, nutritional yeast, almonds, hemp, garlic, lemon juice, olive oil, salt, and pepper to a blender to make the pesto sauce.

  2. Blend everything until you get a thick and creamy sauce.

  3. Cook Liviva Foods fettuccine according to package instructions and add the sauce to the pasta.

  4. Optional: roast cherry tomatoes by slicing them in half and drizzling olive oil, garlic powder, salt, and pepper on top, then roast them in the oven for 15 minutes at 350F/175C.

  5. Add the tomatoes on top of the pesto pasta and enjoy.
