Fresh Vegan Basil Pesto Pasta

Ingredients

  • 200g pasta
  • 2 cups fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup pine nuts
  • 1/4 cup nutritional yeast
  • 1/4 cup olive oil
  • Salt and pepper to taste

Preparation

  1. Cook pasta in a large pot of salted boiling water until al dente, reserving 1/2 cup of pasta water

  2. In a blender, combine basil, garlic, pine nuts, nutritional yeast, olive oil, salt and pepper; blend until smooth

  3. Toss the drained pasta with the pesto sauce, adding reserved pasta water as needed

  4. Serve immediately
