Fresh Vegan Basil Pesto Pasta
Ingredients
- 200g pasta
- 2 cups fresh basil leaves
- 2 cloves garlic
- 1/4 cup pine nuts
- 1/4 cup nutritional yeast
- 1/4 cup olive oil
- Salt and pepper to taste
Preparation
Cook pasta in a large pot of salted boiling water until al dente, reserving 1/2 cup of pasta water
In a blender, combine basil, garlic, pine nuts, nutritional yeast, olive oil, salt and pepper; blend until smooth
Toss the drained pasta with the pesto sauce, adding reserved pasta water as needed
Serve immediately
