20 Minute Avocado Pesto Pasta

Ingredients

  • 12 ounces of pasta, cooked according to the back of the package.
  • 1 large avocado, pitted and the insides scooped out.
  • 1 cup of fresh basil
  • 1/3 cup walnuts
  • 1 small lemon, seeded and juiced
  • 1/2 cup of olive oil
  • 1 tbsp chopped garlic
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt
  • 1/4 tsp pepper

Preparation

  1. Cook pasta according to package, drain, and set aside

  2. In a high powered blender or food processor combine the avocado, fresh basil, walnuts, lemon juice, olive oil, nutritional yeast, garlic, salt, and pepper

  3. Pulse ingredients until it becomes a creamy sauce

  4. Toss cooked pasta with the avocado pesto sauce and eat immediately
