Easy Vegan Basil Pesto Pasta

Ingredients

  • lots of fresh basil leaves ~2 cups
  • 3 cloves garlic, minced
  • juice of 1 lemon (2 tbs)
  • 3 tbs olive oil
  • 3 tbs nutritional yeast
  • 2-3 tbs cashew nuts or 1 tbs joi cashew paste
  • salt + pepper to taste
  • optional: handful of spinach
  • rotini pasta
  • zucchini
  • tomato
  • crumbles of cheese
  • some more fresh basil

Preparation

  1. Add all the pesto ingredients into a food processor and blend until well combined.

  2. Cook rotini pasta according to package instructions

  3. Saute zucchini and tomato until tender

  4. Toss the cooked pasta with the pesto and sauteed vegetables

  5. Optionally, add crumbles of cheese and fresh basil for serving
