Chickpea Flour Scramble with Veggies and Spices
Ingredients
- Olive oil
- 1/2 diced onion
- A few mushrooms
- Spinach
- 1/2 cup chickpea flour
- 1/2 cup unsweetened almond milk
- 2 tbsp nutritional yeast
- 1/2 tsp turmeric
- 1/2 tsp garlic powder
- Salt and pepper to taste
Preparation
Heat a skillet over medium heat.
Add olive oil and vegetables such as 1/2 diced onion, mushrooms, and spinach.
Sauté for 3-4 minutes.
In a bowl, mix 1/2 cup chickpea flour, 1/2 cup unsweetened almond milk, 2 tbsp nutritional yeast, 1/2 tsp turmeric, 1/2 tsp garlic powder, salt, and pepper.
Add the mixture to the skillet and spread evenly.
Let it sit for 1-2 minutes.
Cut and flip the scramble.
Cook for 4-5 minutes until firm.
Tips
This scramble is a good egg alternative and pairs well with toasted sourdough and avocado.
