Chickpea Flour Scramble with Veggies and Spices

Ingredients

  • Olive oil
  • 1/2 diced onion
  • A few mushrooms
  • Spinach
  • 1/2 cup chickpea flour
  • 1/2 cup unsweetened almond milk
  • 2 tbsp nutritional yeast
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Preparation

  1. Heat a skillet over medium heat.

  2. Add olive oil and vegetables such as 1/2 diced onion, mushrooms, and spinach.

  3. Sauté for 3-4 minutes.

  4. In a bowl, mix 1/2 cup chickpea flour, 1/2 cup unsweetened almond milk, 2 tbsp nutritional yeast, 1/2 tsp turmeric, 1/2 tsp garlic powder, salt, and pepper.

  5. Add the mixture to the skillet and spread evenly.

  6. Let it sit for 1-2 minutes.

  7. Cut and flip the scramble.

  8. Cook for 4-5 minutes until firm.

Tips

  1. This scramble is a good egg alternative and pairs well with toasted sourdough and avocado.
