Next Level Sourdough Avocado Toast

Ingredients

  • 1 slice sourdough bread
  • 1 ripe avocado
  • 2 medium tomatoes
  • 1 cup sliced mushrooms
  • 1 tablespoon Tamari

Tofu scramble

  • 0.5 tablespoon olive oil
  • 8 ounces firm tofu
  • 1 tablespoon nutritional yeast
  • 0.5 teaspoon salt
  • 0.13 teaspoon turmeric
  • 0.13 teaspoon garlic powder
  • 1 tablespoon non-dairy milk, unsweetened and unflavored

Preparation

Tofu scramble

  1. Heat the olive oil in a pan over medium heat. Mash the block of tofu right in the pan with a potato masher or fork. Cook, stirring frequently, for 3-4 minutes until the water from the tofu is mostly gone.

  2. Add the nutritional yeast, salt, turmeric, and garlic powder. Cook and stir constantly for about 5 minutes.

  3. Pour the non-dairy milk into the pan and stir to mix.

Vegetable

  1. Preheat oven to 200°C and roast tomatoes until soft

  2. Sauté mushrooms with Tamari in a pan until cooked

Assembly

  1. Toast the sourdough bread until golden

  2. Mash the avocado and spread on the toast

  3. Top with Tamari mushrooms, tofu scramble, and roasted tomatoes
