Vegan Sourdough Avocado Toast with Tofu
Ingredients
Tofu scramble
- 0.5 tablespoon olive oil
- 0.5 of a 16-ounce block firm tofu
- 1 tablespoon nutritional yeast
- 0.5 teaspoon salt
- 0.13 teaspoon turmeric
- 0.13 teaspoon garlic powder
- 1 tablespoon non-dairy milk, unsweetened and unflavored
Toast toppings
- sourdough bread
- ripe avocado
- mushrooms
- tamari sauce
- tomatoes
Preparation
Heat olive oil in a pan over medium heat.
Mash the tofu in the pan and cook for 3-4 minutes until water is mostly gone, stirring frequently.
Add nutritional yeast, salt, turmeric, and garlic powder; stir constantly for about 5 minutes.
Pour in non-dairy milk and stir to mix.
Roast tomatoes in a preheated oven until softened.
Sauté mushrooms in a pan with tamari sauce until tender.
Toast the sourdough bread.
Mash the avocado.
Assemble by spreading mashed avocado on the toasted bread, then top with tofu scramble, sautéed mushrooms, and roasted tomatoes.
