Avocado Toast with Mushrooms and Vegan Cheese

Ingredients

  • 1 slice sourdough bread
  • Mushrooms
  • A bit of extra virgin olive oil (EVOO)
  • Salt
  • Garlic powder
  • Onion powder
  • Handful of microgreens
  • Basil and thyme flowers
  • Everything but the bagel seasoning
  • 1 ripe avocado
  • Melting vegan cheese
  • Lemon

Preparation

  1. Toast the bread with the cheese until it bubbles.

  2. Mash the avocado and add salt, lemon, and everything but the bagel seasoning.

  3. Sauté the mushrooms in a bit of extra virgin olive oil with salt, garlic powder, and onion powder.

  4. Build the toast by spreading the mashed avocado on the bread, adding the sautéed mushrooms, and topping with herbs and microgreens.
