Vegan Omelette with Vegetables and Herbs

Ingredients

  • 2/3 EatJust Egg Container
  • 1 cup Mushrooms
  • 1/2 cup Cherry Tomatoes
  • 1/2 Zucchini
  • 1/2 Onion
  • 1/2 cup Vegetable Broth
  • 1 tsp Garlic Powder
  • 1/2 tsp Cayenne or Chili Powder (optional)
  • 1 Vegan Sausage Link (optional)
  • Salt & Pepper to taste

Garnishes

  • Avocado
  • Arugula
  • Fresh Herbs

Preparation

  1. Chop the mushrooms, cherry tomatoes, zucchini, and onion into small pieces.

  2. In a bowl, whisk together the EatJust egg, vegetable broth, garlic powder, cayenne or chili powder if using, salt, and pepper.

  3. Heat a non-stick skillet over medium heat and pour in the egg mixture.

  4. Cook until the mixture begins to set, then add the chopped vegetables and optional vegan sausage to one side.

  5. Fold the omelette over the fillings and continue cooking until the vegetables are tender and the omelette is fully set.

  6. Remove from heat and transfer to a plate.
