Garlic Mushroom Toast with Avocado Pesto
Ingredients
Avocado pesto
- 1 large ripe avocado
- 1/2 teaspoon salt
- a dash of pepper
- 1/4 cup cilantro
- 1/2 teaspoon roasted garlic paste
- 1 teaspoon lime juice
Pan-fried mushrooms
- mushrooms
- 1 teaspoon coconut oil
- 1 teaspoon avocado oil or neutral oil
- 1 teaspoon garlic paste
- 1/2 teaspoon salt
Base

Preparation
Roast several heads of garlic and squeeze out the paste to make roasted garlic paste.
In a bowl, combine avocado, salt, pepper, cilantro, roasted garlic paste, and lime juice, then blend with a hand blender until smooth to make the pesto.
Cut mushrooms into 1/2 inch slices.
In a pan, heat 1 teaspoon coconut oil and 1 teaspoon avocado oil or neutral oil.
Add 1 teaspoon garlic paste and 1/2 teaspoon salt to the pan.
Add the sliced mushrooms to the pan, cover, and cook for a few minutes until they sweat.
Flip the mushrooms and continue cooking until they are cooked and fragrant.
Toast bread slices until golden brown.
Spread the avocado pesto on the toasted bread and top with the pan-fried mushrooms.
