Protein-Rich Chickpea Flour Scramble Breakfast

Ingredients

  • 1/2 cup (60 g) chickpea flour or use 1/2 cup + 1 or 2 Tbsp more besan/gram flour
  • 1/2 cup (125 ml) water
  • 1 tbsp nutritional yeast
  • 1 tbsp flax seed meal
  • 1/2 tsp (0.5 tsp) baking powder
  • 1/4 tsp (0.25 tsp) salt
  • 1/4 tsp (0.25 tsp) turmeric
  • 1/4 tsp (0.25 tsp) or less paprika
  • 1/8 tsp (0.13 tsp) kala namak Indian sulphur black salt for the eggy flavor
  • generous dash of black pepper

Preparation

  1. Blend all of your ingredients and set this mixture aside.

  2. Begin to sauté onion and garlic over medium heat and add any veggies you desire.

  3. Pour your chickpea flour mixture over your veggies and cook for 2 minutes or until your edges are set.

  4. Drizzle half of the oil on the edges and begin to scramble.

  5. Once scrambling, leave to cook for 2 minutes to set before scrambling again, and continue to cook until the mixture appears dry and ready.

  6. Finally, serve up your cruelty-free scramble and enjoy.
