Simple Veggie Tofu Scramble
Ingredients
- 1 teaspoon extra virgin olive oil
- 8 ounces extra firm or firm tofu
- 1 tablespoon plant-based milk
- 2 tablespoons nutritional yeast
- 1/2 teaspoon salt
- 1/8 teaspoon turmeric
Optional seasonings
- Seasonings of choice, such as dried basil and paprika
Preparation
Heat 1 teaspoon extra virgin olive oil in a skillet over medium low heat.
Add tofu and mash it with the back of a wooden spoon or spatula. Add milk, nutritional yeast, and seasonings, then scramble to combine and heat through.
Serve with steamed spinach, fresh tomatoes, avocado, everything but the bagel seasoning, and hot sauce of choice.
Tips
Tofu scramble tastes similar to scrambled eggs but is better, with the same protein and calories without sodium or cholesterol.
