Sun Dried Tomato Tofu Scramble
Ingredients
- 2 tbsp sun dried tomatoes (in olive oil)
- 8 oz firm tofu
- 2 tbsp nutritional yeast
- 1/2 tsp salt and pepper
- 1 tbsp Italian seasoning
- 1/4 tsp turmeric (for color)
- 1 avocado
- 1 bunch kale
- 1 tbsp flax seed
Preparation
Heat a skillet over medium heat and add sun dried tomatoes with their olive oil. Add in tofu and mash with a wooden spoon. Add in seasonings and scramble for 5-7 minutes until golden.
Meanwhile, massage your kale until tender and slice avocado. Add all ingredients to a bowl and sprinkle with some golden flaxseeds for extra crunch.
