Sun Dried Tomato Tofu Scramble

Ingredients

  • 2 tbsp sun dried tomatoes (in olive oil)
  • 8 oz firm tofu
  • 2 tbsp nutritional yeast
  • 1/2 tsp salt and pepper
  • 1 tbsp Italian seasoning
  • 1/4 tsp turmeric (for color)
  • 1 avocado
  • 1 bunch kale
  • 1 tbsp flax seed

Preparation

  1. Heat a skillet over medium heat and add sun dried tomatoes with their olive oil. Add in tofu and mash with a wooden spoon. Add in seasonings and scramble for 5-7 minutes until golden.

  2. Meanwhile, massage your kale until tender and slice avocado. Add all ingredients to a bowl and sprinkle with some golden flaxseeds for extra crunch.
