Easy Breakfast Tofu Scramble

Ingredients

  • 1 package of firm tofu - pressed for 20 min to get water out
  • 1/2 onion, diced
  • 1 cup chopped mushroom
  • 1-2 garlic cloves, minced
  • 1 cup sliced kale
  • 1 1/2 tbsp nutritional yeast
  • 1/2 tsp turmeric
  • 1 tsp sriracha
  • Salt and pepper, to taste
  • Green onion, for garnish

Preparation

  1. Heat a pan and dry sauté onion for a few minutes, followed by garlic for one minute.

  2. Add mushrooms and shred tofu into small pieces in the pan. Cook for a few minutes.

  3. Add sliced kale. Once kale begins to wilt, add nutritional yeast, salt, pepper, and sriracha. Stir to combine.

  4. Garnish with chopped green onion.

  5. For an egg-like taste, consider using kala namak (black sea salt).
