Easy Breakfast Tofu Scramble
Ingredients
- 1 package of firm tofu - pressed for 20 min to get water out
- 1/2 onion, diced
- 1 cup chopped mushroom
- 1-2 garlic cloves, minced
- 1 cup sliced kale
- 1 1/2 tbsp nutritional yeast
- 1/2 tsp turmeric
- 1 tsp sriracha
- Salt and pepper, to taste
- Green onion, for garnish
Preparation
Heat a pan and dry sauté onion for a few minutes, followed by garlic for one minute.
Add mushrooms and shred tofu into small pieces in the pan. Cook for a few minutes.
Add sliced kale. Once kale begins to wilt, add nutritional yeast, salt, pepper, and sriracha. Stir to combine.
Garnish with chopped green onion.
For an egg-like taste, consider using kala namak (black sea salt).
