Curried Tofu Scramble with Spinach

Ingredients

  • 1 onion diced
  • 3 cloves garlic, minced
  • 1 container of firm tofu, pressed and crumbled
  • 1 teaspoon curry powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • salt and pepper to taste
  • 2 tomatoes, diced
  • 1 bunch fresh spinach

Preparation

  1. In a skillet, sauté the diced onion and minced garlic until softened

  2. Add curry powder, turmeric, cumin, salt, and pepper; stir to combine and cook for 1 minute

  3. Add the crumbled tofu and cook until heated through, about 5-7 minutes

  4. Stir in the diced tomatoes and fresh spinach; cook until the spinach wilts and tomatoes are soft, about 3-5 minutes
