Curried Tofu Scramble with Spinach
Ingredients
- 1 onion diced
- 3 cloves garlic, minced
- 1 container of firm tofu, pressed and crumbled
- 1 teaspoon curry powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- salt and pepper to taste
- 2 tomatoes, diced
- 1 bunch fresh spinach
Preparation
In a skillet, sauté the diced onion and minced garlic until softened
Add curry powder, turmeric, cumin, salt, and pepper; stir to combine and cook for 1 minute
Add the crumbled tofu and cook until heated through, about 5-7 minutes
Stir in the diced tomatoes and fresh spinach; cook until the spinach wilts and tomatoes are soft, about 3-5 minutes
