Tofu Curry with Rice Bowl

Ingredients

  • 1/2 large onion, chopped
  • 240g firm tofu, crumbled
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 can coconut milk
  • 1 tsp curry powder
  • 1 tsp turmeric
  • 2 tbsp tamari
  • 1 head bok choy, chopped
  • Rice, to serve

Preparation

  1. Add the onion to a non-stick frying pan and cook for around 2 minutes, until softened

  2. Add the tofu, cumin and paprika and stir for a further 2-3 minutes to coat

  3. Pour in the coconut milk together with the curry powder, turmeric and tamari and cook for around 5 minutes over a low-medium heat

  4. Stir in the bok choy and cook until it softens and wilts

  5. Serve over a bed of rice of your choice
