Tofu Curry with Rice Bowl
Ingredients
- 1/2 large onion, chopped
- 240g firm tofu, crumbled
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 can coconut milk
- 1 tsp curry powder
- 1 tsp turmeric
- 2 tbsp tamari
- 1 head bok choy, chopped
- Rice, to serve
Preparation
Add the onion to a non-stick frying pan and cook for around 2 minutes, until softened
Add the tofu, cumin and paprika and stir for a further 2-3 minutes to coat
Pour in the coconut milk together with the curry powder, turmeric and tamari and cook for around 5 minutes over a low-medium heat
Stir in the bok choy and cook until it softens and wilts
Serve over a bed of rice of your choice
