Stuffed Tofu Scramble Shells

Ingredients

  • 7 oz firm tofu, crumbled
  • 3 tbsp oat milk
  • 2 tsp turmeric
  • 1 tsp garlic granules
  • 1 tsp cumin
  • 2 tbsp tamari
  • 2 cups spinach

Preparation

  1. Add the onion and garlic to a non-stick frying pan and cook for 2-3 minutes, until fragrant

  2. Add the tofu, oat milk, turmeric, garlic granules, cumin and tamara and stir for 5-7 minutes

  3. At the last minute, stir in the spinach until it wilts and serve
