Stuffed Tofu Scramble Shells

Ingredients

  • 7 oz firm tofu, crumbled⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 3 tbsp oat milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tsp turmeric⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tsp garlic granules⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 tsp cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 tbsp tamari⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 cups spinach⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 1 medium red onion, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
  • 2 cloves garlic

Preparation

  1. Add the onion and garlic to a non-stick frying pan and cook for 2-3 minutes, until fragrant

  2. Add the tofu, oat milk, turmeric, garlic granules, cumin and tamara and stir for 5-7 minutes

  3. At the last minute, stir in the spinach until it wilts and serve
