Stuffed Tofu Scramble Shells
Ingredients
- 7 oz firm tofu, crumbled⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 3 tbsp oat milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tsp turmeric⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp garlic granules⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tbsp tamari⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 cups spinach⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 medium red onion, chopped⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 cloves garlic
Preparation
Add the onion and garlic to a non-stick frying pan and cook for 2-3 minutes, until fragrant
Add the tofu, oat milk, turmeric, garlic granules, cumin and tamara and stir for 5-7 minutes
At the last minute, stir in the spinach until it wilts and serve
