Quick Gluten-Free Vegan Tofu Scramble

Ingredients

  • 1/4 yellow onion, diced
  • veggies of choice (I used kale)
  • 3-4 oz firm tofu
  • 1/4 tsp turmeric (for color)
  • pinch of black lava salt (adds eggy flavor but can also use regular salt)
  • paprika to taste
  • 1 TBSP @bragglivefoodproducts nutritional yeast

Preparation

  1. Heat 1 tsp EVOO in a large cast iron skillet.

  2. Add in onion and veggies and sauté until tender.

  3. Add in tofu and 1 tbsp water or almond milk and mash with the back of a wooden spoon. Add all seasonings on top of mashed tofu and stir to combine. Sauté until heated through.

  4. Serve topped with vegan cheese (optional) and a side of steamed @organicgirl spinach, sliced avocado, and tomato!
