Vegan Spinach Artichoke Dip
Ingredients
- 1 can artichokes
- 3 TBSP addjoi organic cashew base or 1/4 cup raw cashews
- 1 tsp garlic powder
- 1/2 tsp salt and pepper
- 1-2 TBSP bragglivefoodproducts nutritional yeast
- 1/2 tsp dried parsley
- 1 TBSP lemon juice
- 1-2 TBSP addjoi cashew milk
- 1/4 yellow onion
- a couple huge handfuls organicgirl spinach
Preparation
Add half of the artichokes and all ingredients except onion and spinach to a blender or food processor and purée until creamy.
In a large skillet, heat a small amount of EVOO and sauté the onion until tender. Roughly chop the remaining artichokes and add them along with the spinach to the skillet, then sauté until wilted.
Combine all ingredients and season to taste.
Serve hot or cold with chips, toasts, veggies, or as a spread on sandwiches or wraps.
