Artichokes with Black Garlic and Lemon Dill Aioli

Ingredients

  • 2 medium to large Artichokes
  • 2-3 slices of Lemon
  • 1 cup Vegenaise, divided
  • 2 Tbsp lemon Juice
  • 3-4 cloves Black Garlic
  • 1 Tbsp of mymisomayo or 1 tsp Miso Paste
  • 1 Tbsp fresh Dill
  • Salt and Pepper to taste

Preparation

  1. Cut 1.5 inches off the top of the artichoke and trim the stem

  2. Using scissors, cut back a few of the leaves that are now longer than the top

  3. Place the artichokes into a steamer insert in a pot with about 3 inches of water and the lemon slices, cover the pot and steam for 35 to 55 minutes or until the leaves can be removed easily and the flesh is easily scraped off with your teeth

  4. In a small dish, make the Lemon Dill Aioli by mixing 1/2 cup of Vegenaise with the dill, lemon juice, salt and pepper, mix well

  5. In a separate dish, make the Black Garlic Dip by adding the other 1/2 cup of Vegenaise, black garlic, miso mayo, salt and pepper, mix well
