Simple Vegan Cashew Sour Cream
Ingredients
- 1 cup raw cashews
- 1 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 cup + 2 tbsp water or unflavored unsweetened almond milk
- Optional: chives
Preparation
Soak the cashews for 8 hours or quick soak by boiling water, pouring over cashews, and letting sit for 2 hours, then strain.
Add all ingredients to a high-speed blender or food processor, preferably using the smallest container attachment.
Blend until smooth.
Optionally top with chopped chives.
