Simple Vegan Cashew Sour Cream

Ingredients

  • 1 cup raw cashews
  • 1 tbsp apple cider vinegar
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 tsp garlic powder
  • 1/4 cup + 2 tbsp water or unflavored unsweetened almond milk
  • Optional: chives

Preparation

  1. Soak the cashews for 8 hours or quick soak by boiling water, pouring over cashews, and letting sit for 2 hours, then strain.

  2. Add all ingredients to a high-speed blender or food processor, preferably using the smallest container attachment.

  3. Blend until smooth.

  4. Optionally top with chopped chives.
