High Protein Low Carb Vegan Tofu Scramble
Ingredients
- 1/4 red onion, diced
- sliced mushrooms
- sliced asparagus
- 4 oz extra firm tofu
- 1 tbsp nutritional yeast
- 1/4 tsp turmeric
- 1/4 tsp black lava salt
- Paprika or seasonings of choice
- 1-2 tbsp water
- coconut oil
Preparation
Melt coconut oil in a cast iron skillet. Saute onion and any other desired veggies for 2-3 minutes.
Add in tofu and mash with the back of a spoon. Add in seasonings and stir to combine. Add water if necessary. Scramble for a few minutes until tofu is heated through.
Top with fresh herbs and plant-based cheese if desired and serve with steamed spinach, avocado, and heirloom tomatoes.
