High Protein Low Carb Vegan Tofu Scramble

Ingredients

  • 1/4 red onion, diced
  • sliced mushrooms
  • sliced asparagus
  • 4 oz extra firm tofu
  • 1 tbsp nutritional yeast
  • 1/4 tsp turmeric
  • 1/4 tsp black lava salt
  • Paprika or seasonings of choice
  • 1-2 tbsp water
  • coconut oil

Preparation

  1. Melt coconut oil in a cast iron skillet. Saute onion and any other desired veggies for 2-3 minutes.

  2. Add in tofu and mash with the back of a spoon. Add in seasonings and stir to combine. Add water if necessary. Scramble for a few minutes until tofu is heated through.

  3. Top with fresh herbs and plant-based cheese if desired and serve with steamed spinach, avocado, and heirloom tomatoes.
