Okra ( Bhendi ) Masala
Ingredients
- 1 onion, diced
- 1 garlic clove crushed
- 1 tablespoon minced ginger
- 2 tomatoes, diced
- 3 curry leaves
- 1 teaspoon mustard seeds
- 1 teaspoon cumin
- 1 teaspoon curry powder
- 2 tablespoons oil
- 2 cups okra cut wide slices
- salt and pepper as needed
Preparation
Heat a spoon of oil and sauté okra over medium heat for 5-7 minutes (okra should not be sticky after stirring)
Leave the okra aside and heat the second spoon of oil in the same pan
Add the cumin, mustard and curry leaves to the oil and leave them until the seeds pop
Add the onion, garlic, ginger and sauté
Add the tomatoes and cook until disintegrated and then add the spices and salt
Add okra and cover the pot for 2 minutes
Remove the lid and cook until the tomato water has evaporated and serve
