Vegan Lentil Tomato Curry

Ingredients

  • 1 finely chopped green chili
  • 1 chopped onion
  • 3 minced garlic cloves
  • 1 tbsp minced ginger
  • oil or veggie broth
  • 2 tbsp curry powder
  • 1 cup vegetable broth
  • 1-28oz can diced tomatoes
  • 1-1/2 tsp maple syrup
  • 2 cups French lentils
  • 1 tsp apple cider vinegar or fresh lime juice
  • coconut milk to taste
  • salt to taste

Preparation

  1. Sauté 1 finely chopped green chili, 1 chopped onion, 3 minced garlic cloves and 1 tbsp minced ginger in a little oil or veggie broth until onion softens.

  2. Add 2 tbsp curry powder and sauté for another minute.

  3. Add 1 cup vegetable broth, 1-28oz can diced tomatoes and 1-1/2 tsp maple syrup.

  4. Mix before transferring to blender and blend until smooth.

  5. Return to saucepan and mix in 2 cups French lentils.

  6. Bring to a boil before reducing heat.

  7. Simmer until lentils are cooked, about 25 minutes, adding more broth as needed.

  8. Once lentils are cooked, stir in 1 tsp apple cider vinegar or fresh lime juice and desired amount of coconut milk.

  9. Adjust salt and maple syrup to taste.
