Vegan Lentil Tomato Curry Dish

Ingredients

  • 1 finely chopped green chili
  • 1 chopped onion
  • 3 minced garlic cloves
  • 1 tbsp minced ginger
  • a little oil or veggie broth
  • 2 tbsp curry powder
  • 1 cup vegetable broth
  • 1-28oz can diced tomatoes
  • 1-1/2 tsp maple syrup
  • 2 cups French lentils
  • 1 tsp apple cider vinegar or fresh lime juice
  • desired amount of coconut milk
  • salt to taste

Preparation

  1. Sauté the finely chopped green chili, chopped onion, minced garlic cloves, and minced ginger in a little oil or veggie broth until the onion softens.

  2. Add 2 tbsp curry powder and sauté for another minute.

  3. Add 1 cup vegetable broth, 1-28oz can diced tomatoes, and 1-1/2 tsp maple syrup; mix well before transferring to a blender.

  4. Blend the mixture until smooth.

  5. Return the blended mixture to the saucepan and mix in 2 cups French lentils.

  6. Bring to a boil, then reduce heat and simmer until the lentils are cooked, about 25 minutes, adding more broth as needed.

  7. Once lentils are cooked, stir in 1 tsp apple cider vinegar or fresh lime juice and the desired amount of coconut milk.

  8. Adjust salt and maple syrup to taste.
