Vegan Lentil Tomato Curry Dish
Ingredients
- 1 finely chopped green chili
- 1 chopped onion
- 3 minced garlic cloves
- 1 tbsp minced ginger
- a little oil or veggie broth
- 2 tbsp curry powder
- 1 cup vegetable broth
- 1-28oz can diced tomatoes
- 1-1/2 tsp maple syrup
- 2 cups French lentils
- 1 tsp apple cider vinegar or fresh lime juice
- desired amount of coconut milk
- salt to taste
Preparation
Sauté the finely chopped green chili, chopped onion, minced garlic cloves, and minced ginger in a little oil or veggie broth until the onion softens.
Add 2 tbsp curry powder and sauté for another minute.
Add 1 cup vegetable broth, 1-28oz can diced tomatoes, and 1-1/2 tsp maple syrup; mix well before transferring to a blender.
Blend the mixture until smooth.
Return the blended mixture to the saucepan and mix in 2 cups French lentils.
Bring to a boil, then reduce heat and simmer until the lentils are cooked, about 25 minutes, adding more broth as needed.
Once lentils are cooked, stir in 1 tsp apple cider vinegar or fresh lime juice and the desired amount of coconut milk.
Adjust salt and maple syrup to taste.
