Spicy Pulled Chicken

Ingredients

  • 1/2 tsp each of cumin, coriander, chilli and salt
  • 3 tbsp oil
  • 1 onion diced
  • 4 chopped cloves of garlic
  • 1 tsp salt
  • 2 tsp curry powder
  • 2 tbsp ketchup
  • 2 tbsp hot chilli sauce (more if you want it spicy)_
  • 1 medium sized chicken (or use 700g boneless chicken)

Preparation

  1. Pressure cook the chicken for 10 minutes with the salt and spices listed above, once cooked cool and pull/shred the chicken using forks or your hands

  2. Heat oil in a pan, add the diced onion, garlic + green chillies and saute for a few mins

  3. Next add the salt + curry powder and fry for 2 - 3 mins

  4. Lastly add the pulled chicken and the sauces (plus any leftover juices from pressure cooking the chicken), cook on high heat for a few minutes until well combined and most moisture has evaporated

  5. Have a taste and adjust salt/spices/sauce if needed

  6. Use as required on top of pizzas, in sandwiches, wraps or even in a parathas to make pastries

  7. Enjoy!
