Zucchini Fritters with Cheese and Cumin

Ingredients

  • 3 cups of grated zucchini
  • 1/2 onion
  • 1 clove of garlic
  • 1 egg
  • 1/2 cup of gluten free breadcrumbs
  • 1 cup grated cheese
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Oil for frying

Preparation

  1. Grate the zucchini and squeeze out excess moisture to remove water

  2. Finely chop the onion and mince the garlic

  3. In a large bowl, combine the grated zucchini, chopped onion, minced garlic, egg, breadcrumbs, cheese, cumin, salt, and pepper. Mix until well combined

  4. Heat oil in a frying pan over medium heat

  5. Form the mixture into patties and fry until golden brown on both sides, about 3-4 minutes per side
