Malaysian Spiced Chicken Marinade

Ingredients

  • 1 large chicken, cut into 18 pieces
  • 5 large onions
  • 1 bulb garlic
  • 1-inch piece ginger
  • 1-inch piece galangal, sliced thinly
  • 15 lemongrass stalks, cut lengthwise
  • Curry powder for meat
  • Turmeric powder
  • Salt
  • Curry leaves

Preparation

  1. Clean the chicken and dry it until no water remains.

  2. Blend the onions, garlic, ginger, and galangal.

  3. Blend the lemongrass separately, a little at a time.

  4. Mix all blended ingredients in a bowl and strain.

  5. Squeeze the mixture.

  6. Add it to the chicken and mix until well combined.

  7. Add the curry powder and turmeric powder, and mix again.

  8. Finally, add salt, but not too much.

  1. Marinating overnight enhances the flavor.
