Spicy Indonesian Grilled Chicken
Ingredients
- 1 whole chicken
- 3 bay leaves
- 2 lemongrass, crushed
- 4 cm galangal, crushed
- water as needed
- 3-4 tablespoons sweet soy sauce
- salt
- sugar
Spice paste
- 10 large red chilies
- 5-10 curly red chilies (optional)
- 8 shallots
- 3 garlic cloves
- 3 candlenuts
- 4 cm ginger
- 1/2 teaspoon turmeric powder
Preparation
Wash the chicken and cut it into pieces as desired.
Sauté the spice paste, then add the remaining ingredients, and sauté until fragrant. Add the chicken and enough water to submerge it in the sauce, then add salt, sugar, and sweet soy sauce, and check the taste.
Cook the chicken until done; if it is not cooked, add more water. Continue cooking until the water reduces and the sauce turns dark red.
Remove the chicken and grill or oven-bake it. Brush the remaining sauce on the chicken while grilling, turning occasionally. After grilling, add more sauce on top.

Serve with white rice and fresh vegetables.
