Indonesian Green Chili Chicken

Ingredients

  • 700g chicken
  • 1 lime
  • Salt, to taste
  • Sugar, to taste
  • Chicken bouillon powder, to taste
  • 5-6 tbsp fiber creme
  • 400ml water

Spice paste

  • 10 shallots
  • 5 cloves garlic
  • 3 candlenuts
  • 100g green curly chilies

Aromatics

  • 2 bay leaves
  • 4 kaffir lime leaves
  • 1 galangal root

Preparation

  1. Wash the chicken thoroughly, rub with lime juice, let it sit for a while, then rinse again and drain.

  2. Heat enough oil in a pan, sauté the spice paste and aromatics until fragrant. Add the chicken and stir until it changes color slightly.

  3. Add water and fiber creme. Season with salt, sugar, and chicken bouillon powder. Cook over medium heat until the chicken is tender and the flavors are absorbed. Taste and adjust seasoning. Remove from heat and serve.

Tips

  1. Fiber creme can be substituted with coconut milk.

  2. Add more water if needed during cooking to adjust consistency.
