Indonesian Spicy Chicken
Ingredients
- 500g chicken, cut into pieces
- 1 tomato, chopped
- 5 kaffir lime leaves
- 2 stalks lemongrass, bruised
- Lime juice, for marinating
- Salt, for marinating and seasoning
- Sugar, to taste
Ground spices
- 3 cloves garlic
- 8 shallots
- A little ginger
- 10 red bird's eye chilies
- 10 large red chilies
Preparation
Marinate the chicken with lime juice and salt, then set aside.
Fry the chicken until half-cooked.
Sauté the ground spices until fragrant, add lemongrass and kaffir lime leaves, and stir well. Then add tomato and wait until slightly wilted.
Add the chicken, stir well, add a little water, sugar, and salt, and cook until spices are absorbed. Taste and adjust seasoning, then remove from heat.
