Indonesian Spicy Chicken

Ingredients

  • 500g chicken, cut into pieces
  • 1 tomato, chopped
  • 5 kaffir lime leaves
  • 2 stalks lemongrass, bruised
  • Lime juice, for marinating
  • Salt, for marinating and seasoning
  • Sugar, to taste

Ground spices

  • 3 cloves garlic
  • 8 shallots
  • A little ginger
  • 10 red bird's eye chilies
  • 10 large red chilies

Preparation

  1. Marinate the chicken with lime juice and salt, then set aside.

  2. Fry the chicken until half-cooked.

  3. Sauté the ground spices until fragrant, add lemongrass and kaffir lime leaves, and stir well. Then add tomato and wait until slightly wilted.

  4. Add the chicken, stir well, add a little water, sugar, and salt, and cook until spices are absorbed. Taste and adjust seasoning, then remove from heat.
