Fried Gurami Fish with Sambal Matah

Ingredients

  • 1 whole Gourami fish
  • 1 lemon
  • 2 tsp salt
  • 150 g all-purpose flour

Sambal matah

  • 2 kaffir lime leaves
  • 10 red bird's eye chilies
  • 8 shallots
  • 2 garlic cloves
  • 2 lemongrass stalks
  • 1 tsp salt
  • 1/2 tbsp lime juice
  • 1/2 tsp grilled shrimp paste
  • 3 tbsp hot cooking oil

Preparation

  1. Fillet both sides of the gurami fish

  2. Score the inside of the gurami flesh

  3. Open out both sides of the gurami flesh

  4. Marinate with lemon juice and sprinkle salt into the inner sides of the flesh

  5. Coat the gurami flesh in all-purpose flour until evenly covered inside and out

  6. Fry in hot oil until submerged and golden brown, then remove

  7. For the sambal matah, thinly slice all sambal matah ingredients and add salt and lime juice

  8. Add grilled shrimp paste and mix well

  9. Pour 3 tablespoons of hot cooking oil over the sliced ingredients and stir well with a spoon
