Fried Tilapia with Poured Sambal
Ingredients
- 200 grams tilapia
- 1/2 lime
Marinade
- 1 clove garlic
- 1 cm turmeric
- 1/2 teaspoon coriander
- a pinch of ground pepper
- 1/2 teaspoon salt
Sambal paste
- 5 red bird's eye chilies
- 3 red curly chilies
- 1 candlenut
- 1 clove garlic
- 2 cm greater galangal
- 1/2 teaspoon shrimp paste
- 1/4 teaspoon salt
- 1/2 teaspoon palm sugar
- 1/4 teaspoon granulated sugar
Additional sambal
- 2 shallots, sliced
- 1 green tomato, sliced
- 1 lime
- 2 tablespoons hot water
Preparation
Clean the fish, score it, squeeze lime juice over it, and let it sit briefly
Grind the marinade spices
Rinse the fish and marinate it with the ground spices
Prepare the sambal ingredients
Fry the fish until cooked to desired crispness
Grind the sambal paste ingredients
Squeeze juice from half a lime into the sambal
Add sliced shallots and green tomato, and pound coarsely
Add sliced lime and pound lightly
Pour in hot water and stir well
To serve, place the fried fish on a plate and pour the sambal over it
Notes
Divide one lime into two parts: use half for squeezing and half sliced
