Smashed Tempeh with Spicy Sambal
Ingredients
- Tempe
- Coriander seeds
- Salt
- Turmeric
- Garlic cloves
- Candlenuts (a few)
Sambal
- Garlic (2 cloves)
- Shallots (4 cloves)
- Red bird's eye chilies (10)
- Grilled shrimp paste (1 teaspoon or small packet)
- Tomato (1 medium)
- Salt to taste
- Sugar to taste
Preparation
Slice the tempe as desired and marinate it with coriander seeds, salt, turmeric, garlic cloves, and a few candlenuts for about 15 minutes.
Fry the marinated tempe until golden and cooked.
Fry the shallots, garlic, red bird's eye chilies, and tomato until they are cooked and softened.
Grind the fried ingredients together with grilled shrimp paste, salt, and sugar; add monosodium glutamate if desired.
Pour 1 tablespoon of hot oil over the ground sambal mixture and stir well to combine.
Smash the fried tempe onto the sambal and serve immediately.
