Spicy Beef Balado with Petai
Ingredients
- Petai beans
- Salt
- Curly red chilies
- Shallots
- Tomato
- Half onion
- Beef shank
- Garlic
- Coriander seeds
- Ginger
- Tamarind water
- Water
- Oil
Preparation
Scrape off the skin of petai beans and remove the edges
Cut each petai bean into pieces and split them open without breaking to check for worms
Soak the petai in salted water, then rinse and fry until crispy
Blend curly red chilies, shallots, and tomato to make the balado sauce base
Add chopped onion to the balado mixture
Grind garlic, coriander seeds, ginger, tamarind water, and salt into a paste for the meat marinade
Simmer the beef with the spice paste and water until tender
Fry the cooked beef briefly in hot oil
Combine the fried beef, fried petai, and balado sauce, then heat through
Tips
Minang people commonly eat petai with the skin fried as is
Serve with sayur asem and skin crackers to enhance the meal
