Shredded Steamed Tuna with Indonesian Spices
Ingredients
- 2 large mackerel tuna
- 1 bunch basil leaves
Ground spices
- 10 shallots
- 3 garlic cloves
- 1 cm turmeric
- 5 red chilies
- 2 cm ginger
Additional seasonings
- 2 bruised lemongrass stalks
- 5 kaffir lime leaves
- 3 bay leaves
- Sugar to taste
- Salt to taste
Preparation
Steam the mackerel tuna until cooked, then shred and remove bones.
Sauté the ground spices and additional seasonings until fragrant.
Add about 4 tablespoons of water and let it boil to release the spice essence.
Add sugar and salt to taste.
Mix in the shredded fish and stir until the spices are evenly distributed.
Adjust the seasoning, then add the basil leaves.
Stir again until the basil wilts, and serve.
Tips
For a milder version, omit bird's eye chili; however, adding it can make the dish spicier and more flavorful.
